I know just what your mornings are missing! Your family gathered around the table together, eating these amazing pancakes.
What makes these pancakes so great? Well, there are a few qualities that add to their fantastic-ness. First off, these are easy. EASY!! You throw all the ingredients in the blender and blend. Boom. Done. Second, despite the easiness of the recipe, these still turn out fluffy. Not a sad, flat, dense pancake.
Third, these pancakes are amazing. I’ve been making these for my kids, visiting family, and friends for years. Every time I get rave reviews.
Fourth, there is oatmeal hiding in these babies. Take some comfort knowing these will fill you up, and keep you going for a while.
Do you really need more reasons to try this recipe out?
Ok, well then, reason 5, can be the cinnamon and vanilla that make these taste even better. You don’t need to smother these in syrup to cover up any bland-tasting pancakes. Too yummy. But I do still recommend syrup, because Buttermilk syrup is delicious, and I’ll take any excuse to get that in me.

Ingredients
- 3 eggs
- 2 1/2 cups buttermilk
- 2 1/3 cups flour
- 1 cup oatmeal- uncooked, rolled oats, quick oats- either will work
- 1/2 cup oil- I use vegetable or canola
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp baking powder
- 2 tsp sugar
- 1/2 tsp cinnamon
- 1 1/2 tsp vanilla extract
Instructions
- Add all ingredients to a large blender. Blend until smooth, stopping to scrape down the sides of the blender if necessary, then blend again until smooth.
- Pour batter onto a hot griddle in about 1/3 cup measurements per pancake. (I just eyeball it, but you can use a measuring cup if you want.) The griddle should be about medium heat.
- The pancake batter will bubble up while cooking. Let the bubbles start to pop and the edges begin to dry before flipping the pancake. The pancakes should be golden brown after cooking. Adjust the temperature of the griddle as needed.
- Serve straight off the griddle. Top with your favorite syrup, whipped cream, sliced fruit, chocolate chips, etc.
