Super easy dinner here. I used left overs to put these quesadillas together, and it was so quick and they tasted amazing.
I added each ingredient in layers. Add them while the tortilla is on the hot pan so it can start getting crisp.
Once you have all the yummy fillings in just fold the tortilla in half and let the cheese melt and the tortilla get crispy.
Serve warm with sour cream, guacamole, or your favorite salsa.
Ingredients
- Refried beans
- Cilantro- rough chopped
- Chicken- cooked and chopped
- Queso Fresco- crumbled
- Cheese (Colby Jack, Monterey, Pepper Jack, etc.)- grated
- Tortillas
Instructions
- Spread beans on one half of tortilla and place tortilla on greased pan, on medium heat. Top beans with cilantro, chicken, queso fresco, and cheese. Fold tortilla in half and flip over so the cheese side is closest to the heat and can melt. Let tortilla continue to heat until cheese in melted and tortilla is crisp and golden brown.
- Serve warm with sour cream, guacamole, or salsa.

Queso Fresco is a white cheese that comes in a (round) brick and crumbles. I have been able to find it at my local grocer and Wal-mart.
