Healthy Menu Plan: Week 2

January 13, 2014 by Leia

Here are this weeks ideas of meals than are pretty healthy, or can easily be modified to be so.  I’ve featured two recipes from other bloggers here, so check them out, too.

Keep up the good work everyone!

Day 1:  Grilled Salmon with Avocado Salsa from Laylita’s Recipes.  I know it’s probably not grilling weather where you live, but you could cook this under the broiler in your oven, just watch it carefully.

Day 2:  Minestrone Soup  Feel free to omit the Italian sausage from this recipe, if that doesn’t fit in your diet.

Day 3:  Teriyaki Chicken Skewers  You can serve these with the veggie kabobs that are included in the same post.

Day 4:  Irish Tacos  Change up the toppings here if you want.  You can also add a serving a fruit on the side.

Day 5:  Clean Eating BBQ Pizza from The Gracious Pantry.  Feel free to use whatever toppings you want.  Some suggestions are: mushrooms, onions, peppers, olives, chicken, artichoke heats, spinach, etc.

Days 6 & 7: Leftovers and a freebie!

Hello there!

Hi there! My name is Leia. I love to eat. Good thing I also love to cook and bake. ;)
I think food can bring people together. I value family dinners and sharing good conversations over a slice of pie or some saucy nachos. Food makes people happy, and I want to help with that. Let's dig deeper →
