S’mores Truffles

We all love s’mores.  But sometimes it’s not so convenient to make them.

So, I took those yummy s’mores flavors and packed them into a truffle.  Now you can satisfy those cravings without having to build a fire, or get sticky marshmallows all over your hands.

I guess these are kind of refined s’mores.  Maybe….

S'mores Truffles- a yummy dessert, for when you don't have a camp fire

If you have a food processor these can be mixed up super fast.  If you don’t have a food processor, it might take a little longer, but still worth it.

Toasted Marshmallows for S'more Truffles

I added toasted marshmallows to the mix to give these a real s’mores flavor.  I put the marshmallows on a pan, lined with foil and then greased.  Then put them under the broiler for a little, until they are a golden, toasty brown.  I toasted both sides.

Making S'more Truffles

Once I had my truffle mixture, I formed it into balls, about the size of a walnut.  I greased my hands with shortening before shaping the balls.  Then let them firm up in the freezer for about 10-20 minutes.  I used some wooded skewers to dip the balls into chocolate candy melts.  You could use melted chocolate instead, just add some shortening to the chocolate to help it set up once cooled.

Before the candy melts set up, I dipped the top in some crushed graham crackers.

This recipe makes about 26 truffles.  The recipe can be easily halved, if you want.

Because of the chocolate and cream cheese, these babies are pretty rich.  I can’t eat more than 2 or 3.

These would be awesome  as Oreo S’mores Truffles as well.  Just use Oreos instead of the graham crackers.

S’mores Truffles

Ingredients

  • 2 sleeves of graham crackers + 1 graham cracker for topping
  • 8 oz cream cheese
  • 20 regular size marshmallows- not mini
  • 1 package chocolate candy melts (or about 2 cups of chocolate chips with 2 Tbs shortening)

Instructions

  1. In a food processor (or a large ziplock bag) crush the graham crackers to fine crumbs.
  2. Line a cookie sheet with foil or parchment paper, then grease it. Place the marshmallows on the pan, and put the pan under the broiler until they are golden brown. Watch them carefully, depending on your oven, they may cook pretty fast. Turn the marshmallows over and brown the other side as well. Add the toasted marshmallows and the cream cheese to the crushed graham crackers. Mix well, until fully combined. You can do this in your food processor, or in a large bowl with a hand mixer, or your hands.
  3. Roll the mixture into balls, about the size of a walnut. You should get about 26 balls. Place the balls on the greased sheet you cooked the marshmallows on and place in the freezer for 10-20 minutes.
  4. Crush the one remaining graham cracker in a small ziplock bag, and place in a small bowl. Set aside.
  5. Melt the candy melts/ chocolate and stir until smooth. Use a toothpick or skewer to dip the chilled balls into the melted chocolate. Tap the skewer on the edge of the bowl or jar of chocolate, letting the excess drip back into the bowl. Turning the truffle as you tap the skewer. Then dip the top of the truffle into the crushed graham crackers, and let cool. You can stick the empty end of the skewer into Styrofoam to hold it up while the chocolate cools.
  6. Store in an airtight container if not eating right away.

I sent a bunch of these with my husband on a scouts camp out.  They were staying in a cabin, because of the cold weather.  So I think these will be a hit, since there won’t a bonfire.  And there’s no clean up for them.    I’m such a nice wife.  😉
